Rustic Twice-Baked Potato Casserole




The ingredients; 


5 lbs russet potatoes, baked (approx. twelve cups once chopped)
1/2 cup grated Parmesan cheese
8 oz. sharp cheddar, grated & divided
3/4 cup low fat Greek yoghurt
1/4 cup milk
3/4 teaspoon dry ground mustard
1-1/2 teaspoon kosher salt
1 teaspoon ground black pepper
3/4 teaspoon garlic powder (or 2-3 minced garlic cloves)
1/4 teaspoon onion powder
1 or a pair of dashes cayenne pepper (optional)
1 cup sliced inexperienced onions, white and inexperienced components, divided


Steps for preparation :


Firstly, heat up kitchen appliance to four hundred degrees. Scrub potatoes underneath running water.do not forget Use a metal fork to poke some holes in every potato. After that, Place on rack in kitchen appliance and bake for 50-60 minutes, till soft once squeezed. take away and funky entirely or refrigerate for gathering casserole later.

TO ASSEMBLE CASSEROLE: heat up kitchen appliance to 350 degrees. feat skin on, chop baked, cooled potatoes into 3/4" cubes and raise giant bowl. In separate little bowl, add yogurt, powdered mustard, garlic powder, onion powder,milk, Parmesan cheese, 1/2 cup cut cheddar, salt, pepper, cayenne (if using), and 3/4 cup inexperienced onions; stir until mixed. Pour over potatoes and toss till mixed.After that Transfer mixture to associate oiled or sprayed 3-quart (9x13") clear baking dish. 

Sprinkle left cheddar on high. Bake uncovered 45-55 minutes, till gently suntanned on high, and edges and bottom area unit visibly well suntanned. take away from kitchen appliance and sprinkle 1/4 cup sliced inexperienced onions on high.

build AHEAD TIP. refrigerate it once covering the dish for up to one day beforehand.. take away from the refrigerator a half-hour before you wish to bake it, 

Finally, Keep them within the refrigerator and heat up within the kitchen appliance, or on the stove high or grill. After that, attempt reheating in a very frying pan on the stove-top so as to revive those tender, brown components. nice with breakfast that approach. Or, wrap it in a very foil packet and heat up it on the grill--it may get brown and tender that approach.
